Unbeetable Pink Chia Smoothie

I love the colour in this one! So rad!

Smoothie:

1 cup frozen strawberries

1 cup frozen mango

3 bananas

1/4 cup chopped, peeled red beet

Almond milk, as needed (I used about 2 1/2 cups)

Chia mix:

3 tablespoons chia seeds

3/4 cup almond milk

Soak the chia seeds in the almond milk for an hour or two (or if you're pressed for time, you can use less almond milk and only soak them for 10-20 minutes). This will end up being a pudding consistency because chia seeds puff up when they're introduced to liquid! Blend all the smoothie ingredients until smooth, then pour into a glass and mix with the chia pudding.
