Easy Autumn Salad

This quick and easy recipe for two, or a very hungry one, uses four ingredients and 

requires only the most basic food prep equipment.


  • Cutting board 
  • Sharp knife 
  • Measuring spoons 
  • Measuring cup 
  • Veggie scrub brush 
  • Juicer (useful but not necessary) 
  • Grater (maybe)


7 celery stalks 

4 medium apples 

½ cup walnuts

2 tsp freshly squeezed lemon juice


Thoroughly wash celery stalks and remove both ends, cut each stalk in half and cut into ¼-inch wide pieces. Set aside. Measure out ½ cup of walnuts and coarsely chop. Set aside. Thoroughly scrub apples to remove any dirt, pesticide residue and wax, then core, leaving on skin. Cut apples into quarters and slice, width-wise, into ¼ to ½-inch pieces. Set aside. Juice one lemon and measure 2 teaspoons into a large bowl (not metal), add sliced apples and toss until every slice is covered in lemon juice. This will prevent the apples from turning brown and add a nice kick of flavor. Add celery and walnuts and toss together ingredients.

This salad is sweet, crunchy and very filling. And if you'd like your salad even sweeter, grate one of the apples and toss with the sliced celery before tossing with the rest of the ingredients.
